Creative Zucchini Recipes

As the weather gets warmer (finally!) we’re starting to see tons of fresh summer squash in the markets. Here are a few creative ideas of how you can use zucchini this year.

Not only does zucchini boast several health benefits, such as eye, heart, and prostate health, it is also extremely versatile and delicious.

 

Baked Zucchini Fries

This is my all time favorite way to use zucchini.  These “fries” are addictive and the perfect side dish for any meal.  I like to serve them with marinara sauce for dipping, but any sauce or dressing you enjoy would work.I promise that even the vegetable-averse will enjoy these!  Since I first made this recipe, I have started using panko bread crumbs, which make these fries even crispier.

 

Zucchini Noodles

Zucchini is a great replacement for pasta if gluten doesn’t agree with you or if you’re looking for a more nutrient dense option.  You’ll come up with the prettiest noodles using a mandolin, vegetable spiralizer, or julienne peeler, but you can also use a simple grater or a knife and some patience if you don’t have any of those tools (like me).  You can use these noodles in your favorite noodle dishes from asian stir fry to italian pasta dishes!

 

Grilled Zucchini

This one is for the minimalist.  Zucchini is so tasty on it’s own that you don’t always need to turn it into fries or noodles to enjoy it. Just brush it with olive oil, season with salt and pepper (and some garlic and herbs if you want) and throw it on the grill.  This is one of the best simple side dishes out there. Feel free to add any of your other favorite veggies into the mix!
