Apple Recipes

As you saw in our recent post, “an apple a day keeps the doctor away” is not just a catchy phrase.  Apples are packed with nutrients and are in their peak season NOW, which is why they have earned the prestigious title of food of the month.  As much as I love to grab an apple to munch on as a snack, sometimes I want to spice up (literally and figuratively) my apples.

Here are a few creative ways to highlight this amazing fall ingredient:

 

Breakfast

Try this Apple-Cinnamon Baked Oatmeal for a healthy, high-fiber breakfast that will last you all week long.

 

Lunch

Apples are one of my all time favorite salad ingredients.  Pair them will the all mighty kale in this Kale Salad with Apples, Cranberries & Pecans.  Add some cooked quinoa or roasted sweet potatoes to make this an even more filling meal.

 

Dinner

Just behind apples on my list of favorite fall produce are brussel sprouts.  Bring them together in this amazing sweet and savory side dish–Roasted Brussel Sprouts and Apples.
