Just Peachy!

August is National Peach Month, which is something worth celebrating!

Not only are peaches sweet, juicy, and my personal favorite fruit, but they also boast several health benefits. They are low in calories (only about 50-60 calories) and are a great source of vitamin C, which is a powerful antioxidant that helps prevent inflammation. Peaches also are high in fiber, vitamin A, and potassium.

Keep in mind that peaches are one of the foods that appear on the “dirty dozen” list, which means that they can be high in pesticides and are worth buying organic if you can.

 

Using the Peach

I love using peaches to add color and sweetness to my summer salads and there are so many great combinations you can try.  A simple green salad with sliced peaches and toasted nuts is a super quick and healthy option.  Here is a beautiful and unique salad that has roasted green beans, beets, and marinated goat cheese Another of my favorite combinations is heirloom tomatoes with peaches and balsamic vinegar.  Get creative and throw peaches into your next summer salad!

Peaches are also an amazing crostini topping. This one has grilled peach slices, burrata (or another soft cheese) and fresh basil on whole grain bread slices. Quickly grilling the peaches really brings them to the next level, by enhancing their sweetness and adding a slight smoky flavor.

For a simple breakfast or dessert, simply halve a peach and fill with Greek yogurt or low-fat ice cream or frozen yogurt.  You can leave the peaches raw or broil or grill them to make them a bit softer and sweeter.

You really can’t go wrong with this beautiful summer fruit.  So here’s to a peachy August!
