Recipes from Around the World: Seaweed Tomato Fish Soup

Fish soup is loved by nearly every Asian family. It is easy, nutritious, yummy and quick to prepare. You can have it for a hot breakfast or as a side dish at dinner. The fish fillet in the soup is tender and nutritious, and it melts right away in your mouth. Ginger helps intensify the taste. Additionally, the seaweed and tomatoes bring out sweet and sour flavors. With just a few ingredients, a delicious fish soup is ready to serve.

  1. Fish is a great source of protein, omega-3 fatty acids and vitamins. It is also full of minerals, such as iron, zinc, iodine, magnesium and potassium.
  2. Studies have shown that ginger may reduce chemotherapy-induced acute nausea. As little as 0.5g-1g of ginger per day can help alleviate nausea or morning sickness [i].

Recipe

Seaweed Tomato Fish Soup

Serves: 3-4

Ingredients

  • 2 tomatoes
  • 4 Tbsp dry seaweed
  • 15 oz fish fillet (sea bass and other white fish are the best)
  • 3 Tbsp ginger
  • Salt and pepper to taste

Instructions

  1. Cut the tomatoes into small cubes and wash the seaweed.
  2. Saute the fish in oil until it is fully cooked.
  3. Boil 6 bowls of water with ginger, tomatoes, and fish.*
  4. Add seaweed and boil for an additional 10 minutes.
  5. Season with salt and pepper.

*This step can be done on the stovetop or in a pressure cooker.
