Turkey Sweet Potato Hash

Last month, we announced the launch of Cooking. Comfort. Care. Nourishment for the Pancreatic Cancer Fight in collaboration with Celgene, Pancreatic Cancer Action Network, and Chef Michael Ferraro.  This educational and awareness program features tips for nutritional issues that pancreatic cancer patients and their caregivers may face.

 

Turkey Sweet Potato Hash

We mentioned in our blog that this program offers some recipes that are appropriate for the pancreatic cancer patient, including this recipe for Turkey Sweet Potato Hash. Although this is a fitting recipe for pancreatic cancer patients, it is also appropriate for anyone going through cancer treatment. Sweet potatoes and apples are in season and you may even have most of these ingredients from leftovers, so this recipe works great for the holiday season!

Many cancer patients experience fatigue, which makes it difficult for them to prepare healthy meals everyday.  This recipe is very easy to prepare and is nutrient dense. It is a good source of protein and B vitamins, which can help boost your energy.  The cooked apple and sweet potato are great sources of soluble fiber that is easily tolerated. They are also full of antioxidants like beta-carotene and quercetin.

This recipe can also be easily customized according to your preference.  The cooked turkey can be substituted with ground turkey or chicken if you’d like.  If you are experiencing fat intolerance, you can substitute for sour cream with reduced-fat sour cream or reduced-fat yogurt.  For those with dairy intolerance, simply omit the sour cream.

Other than the nutritional value, this recipe is appetizing due to its variety of textures and the contrasting sweet and savory flavors. We hope you try and enjoy this recipe!
