Strawberry May-hem!

May is one of my favorite months of the year.  The days are getting longer, the weather is getting warmer, and everything is in bloom (just ask my allergies).  Here’s yet another reason to love May–it’s National Strawberry Month!  Strawberries are as delicious as they are beautiful, so here are a few ideas of how to use them this spring and summer.  

1.  This Strawberry, Farro, and Feta Salad is a nutrient powerhouse and one of my favorite summer salads.  Just combine 2 cups of fresh greens (like spinach or arugula), with a 1/2 cup of cooked farro (or another healthy whole grain like quinoa or barley), 1 oz of crumbled feta cheese, a handful of sliced strawberries.  Drizzle with balsamic vinaigrette and enjoy!

 2.  Don’t worry, this Green Monster Smoothie looks a lot greener than it tastes.  That’s because it gets tons of sweetness from strawberries! Combine 3/4 cups fresh or frozen strawberries, with 1/4 cup diced green apple, half of a ripe banana, a large handful of spinach or kale, and 3/4 cup unsweetened vanilla almond milk (or other milk of choice). Blend until smooth and feel healthier with each sip!

3.  Check out our recent blog post to learn about the many health benefits of strawberries and also get a delicious recipe for Strawberry-Mango Salsa.  I like to add diced avocado to mine to get an extra serving of healthy fat.  You can serve this sweet and spicy salsa with baked tortilla or plantain chips, or over grilled chicken or fish.

4.  You can’t beat the combination of berries, greek yogurt, and granola.  I could eat that every day for breakfast for the rest of my life and be incredibly happy.  Be sure to choose a low sugar granola and use plain greek yogurt rather than the flavored kinds which can be loaded with sugar.  If you want to get really fancy, you can even bake homemade granola into little cups like these to make mini berry parfaits!
The possibilities when it comes to strawberries are endless, so pick up a pint and start cooking!
