Just Beet It

Beets are the perfect ingredient to highlight this season not only because their gorgeous color rivals even the most beautiful Valentine’s day card, but also because of their incredible nutritional benefits and delicious sweet flavor.  Their versatility also can’t be beet (see what I did there?), and here are just a few delicious ideas of how you can use beets!

 

Beets are Versatile

Roasted root vegetables are my go-to side dish all winter long.  They’re as easy as they are delicious and can use any mix of veggies you like (like beets, carrots, parsnips, onions, sweet potatoes, or any type of winter squash). Simply toss it all together, roast, and enjoy the perfect sweet and savory side dish.

Another amazing use for roasted beets is in this GORGEOUS beet hummus.  It’s the perfect appetizer to impress your friends or snack you can enjoy every day.  The beets give this garlicky, protein and fiber-packed dip just a hint of sweetness to bring your crudités to the next level.

If you don’t have time to wait for beets to roast, you can find already steamed, packaged beets in most grocery stores these days.  I keep a package in the fridge at all times! For a quick side dish, I combine cooked quinoa, beets, and any other vegetables I have on hand and serve along with seared salmon.  Or make it a stand-alone meal by adding some greens, toasted nuts, sliced apples or pears and crumbled goat cheese or feta.

Looking for something a little more advanced? Try these Beet, Butternut Squash, and Potato Pancakes (Latkes).  They can be served as an appetizer, brunch dish, or snack and can be topped with applesauce or chive-yogurt and smoked salmon.

Still looking for more ideas? Beets can be blended into smoothies (raw or cooked), tossed into any salad, thinly sliced and baked into chips, shredded and mixed into veggie burgers, and so much more.  Not to beet a dead horse, but the possibilities are endless!
